In the process of high-temperature sterilization, our products sometimes encounter the problems of tank expansion or lid bulging. These problems are mainly caused by the following situations:
The first is the physical expansion of cans, which is mainly due to the poor shrinkage and rapid cooling of cans after sterilization, resulting in an outward convex shape because the internal pressure is much greater than the external pressure;
The second is the chemical expansion of the tank. If the food acidity in the tank is too high, the inner wall of the tank will corrode and produce hydrogen. After the gas accumulates, it will produce internal pressure and make the shape of the tank protrude.
The third is bacterial can bulging, which is the most common reason for can bulging. It is caused by food corruption caused by microbial growth and reproduction. Most of the common spoilage bacteria belong to specific anaerobic thermophilic Bacillus, anaerobic thermophilic Bacillus, botulinum, specific anaerobic thermophilic Bacillus, Micrococcus and Lactobacillus. In fact, these are mainly caused by the unreasonable sterilization process.
From the above points of view, the cans with physical expansion can still be eaten as usual, and the contents have not deteriorated. However, ordinary consumers can not correctly judge whether it is physical or chemical or biological. Therefore, as long as the can is inflated, do not use it, which may cause certain harm to the body.
